Ingredients
1/2 c Plain Greek Yogurt
2/3c pumpkin puree
1/4t pumpkin spice
2t + 2t Erythritol or other sweetener
1t chia seeds
2t almond milk or any milk
1/4t vanilla extract
1T sweetened condensed coconut milk or sweetened condensed milk
Preparation
For Yogurt:
In a small bowl combine yogurt, chia seeds, milk, and 2t erythritol or 1t sugar. Set aside for at least 5 mins to thicken.
For Pumpkin:
In another bowl mix pumpkin puree, pumpkin spice, vanilla, remaining sweetener of choice, and sweetened condensed milk or coconut milk.
For Layers:
Spread 1/2 of yogurt mixture in the bottom of a small container with lid. Layer 1/2 or pumpkin mixture on top. Repeat with remaining yogurt then remaining pumpkin. Cover and refrigerate for at least 30 mins. Enjoy!
