Ingredients
1/2c all-purpose flour
1/2c almond flour * No almond flour? No Problem, use 1c all purpose instead.
3/4c almond milk or regular milk
1T Erythritol or granulated sugar
1T avocado oil
1t vanilla extract
3t baking powder
1/2t kosher salt
1 large egg
Preparation
Step 1
Preheat griddle to 375 degrees.
Step 2
In a medium bowl beat egg until fluffy. Add oil, vanilla, and milk. Wisk together.
Step 3
In another bowl add flours, sugar, baking powder, and salt, Mix together.
Step 4
Add dry ingredients to egg mixture, stir until just combined. Try not to overmix. Batter should be slightly lumpy but well mixed.
Step 5
Pour 1/4c batter on griddle. Cook for 3-4 mins or until bubbles form around edges. Flip. Cook for additional 2-4 mins. Serve with Maple Syrup.
Makes 4-6 pancakes.
