
Ingredients
1 15oz can chickpeas, drained and rinsed
2 tablespoons olive oil, divided
1 teaspoon za’atar seasoning, divided
1/4 cup full fat plain Greek yogurt
2 cups shredded lettuce
1/2 cup cucumber slices
1/2 cup cherry tomatoes
1 tablespoon diced red onion
1/4 cup crumbled feta
2 tablespoons fresh parsley, chopped
Preparation
Step 1
In a large bowl, gently toss the chickpeas with 1 tablespoon olive oil and sprinkle with 1/2 teaspoon za’atar seasoning.
Step 2
In a non-stick skillet, cook the chickpeas over medium heat for 7-8 minutes, stirring frequently, until crispy and browned.
Step 3
In a small bowl, whisk together the Greek yogurt, remaining olive oil, and remaining za’atar seasoning.
Step 4
Divide the lettuce into two bowls. Top with chickpeas, cucumbers, tomatoes, red onion, feta, and parsley. Drizzle with yogurt sauce and additional olive oil, if desired. Enjoy!
