Ingredients
1 can coconut milk
1/4 cup maple syrup
1 Teaspoon vanilla
1 Teaspoon ground cardamom
a pinch of salt
11/2 cup water
1/2 cup chia seeds
1 1/2 cups chopped pineapple
1 1/2 cups frozen mango chunks
Preparation
Step 1
Mix together the coconut milk, maple syrup, vanilla, cardamom, and water until fully combined.
Step 2
Add the chia seeds to the coconut mixture and mix just to combine. Pour the chia mixture into
6 – 1 cup mason jars, 1/2 cup per jar.
Step 3
Refrigerate for 2-3 hours to allow to thicken. Then top each jar evenly with the remaining fruit and refrigerate until ready to eat. Enjoy!
