Each day we will begin with a small lesson from our Culinary Corner. We will share with you commn Restaurant cooking tips & storage hacks as it relates to your dishes. Then we will jump straight into the Recipe of the day! This mini course also grants you access to live coaching so if your stuck or unsure about a recipe variation. Without further delay! Let us begin inside our Culinary Corner!

If you have ever experienced a recipe fail when trying to reinvent your holiday ham we are here to let you know it may not have been your fault! A major thing to consider when repurposing meat is the original glazes, spices, seasonings, and sauces we exposed it to. The cooking method we used must also be considered. Always look for a recipe that compliments the original flavor of the dish. This makes it easier to incorporate into your dish. If you can not find a desirable recipe that compliments the original flavors the next best thing to consider is "re-flavoring" the meat.
Key Terms & Definitions:
REFLAVOR- The process in which food, meat in particular, is stripped of original flavors added during the cooking process then flavored again using a different flavor family, thus effectively changing the flavor profile of the meat to effectively present in an alternative fashion.
The reflavoring process is a very beneficial way to save money by reducing food waste. Let's consider that it does not matter if we originally used a wet or dry cooking method. The flavor that we inctroduced is there! Any in some cases it can be nearly impossible to revert. With the reflavoring method we represent ourselves with a blank canvas for our for our next masterpiece! And in our case we are in luck! One of the easiest meats to reflavor is properly cooked HAM, this is because of the density of the meat! We can easily change the flavor profile by implementing one of these common resturant hacks.
1. Boil the Meat rapidly for 10-15 mins
2. Microwave the meat submerged in a bowl of water for roughly 3-5 mins per lb
It's THAT simple! Leading restaurants know the reflavoring technique well! We use it OFTEN and now so can you! Do not think for 1 second that your favorite "chow corral" cook isn't implementing this MONEY-SAVING technique and I'm going to break down why. Often times the customer demands of particular items changes (especially in the case of Special or Limited Time offerings). This can be due to a number of factors we don't have time to discuss here, but keep in mind that when we experience this restaurants are left with a ton of partially cooked or fully cooked food items that we MUST repurpose for profitability! Commercial kitchens in profitable operations will ALWAYS try to repurpose a food item before they ever consider throwing it away. We understand that some items are better suited for the waste heap. But that is only after all other options have been exhausted.
Keep in mind. Everything CAN NOT be repurposed! Everything CAN NOT be reflavored! As stated above, the reflavoring technique does not apply to all spices and can not be used on all food items. But us industry insiders love this method in general because we simpy can not afford to make a common practice of throw away food items, unless of course they are unsafe to offer to our patrons. That being said any restaurant or commercial kitchen that does will make it harder for themselves to survive in not only the long but equally the short term of things.
Done properly this technique will help you retain the moisture of the meat while extracting the added flavors. This is because the water causes our meat to expand releasing it's flavoring compounds. If we time it right, we can stop boiling the meat once the ADDED flavoring components have been released but before the natural flavors dissappear. This provides the perfect opportunity to incorporate a new flavor and start all over again.
Helpful Hint: DO NOT over boil the meat. Maintaining a rolling boil for 10-15 mins should do it! Please taste it along the way! After the meat has finished boiling you can simmer the new flavor right. Be sure to keep the stove on medium-low during this process and over saturate.
Today we will have no need to incorporate this method because the original flavor of our ham will only lend to this dish..... BUT keep this method in mind for later! You now KNOW it and can PRACTICE and perfect this industry insider tip anytime in the comfort of your own home! Add it to your "Home Chef" Know How!
We are starting with a crowd pleasing favorite. This recipe is a adaptation of our classic Breakfast Casserole. It is proven to satisfy even the pickiest of eaters! I loved this variation because I was able to use ingredients I generally have on hand so it literally did not cost me 1 additonal penny! And it way a great way to use that last bit of bread that we always seem to be stuck with!

This recipe will yield 12 servings but can be easily modified to reduce or increase portions. If this quantity is too large or too small be sure to email me for variations!
Ham Breakfast Casserole

Prep: 10 mins Cook Time: 45 Mins Yield: 12 Servings Cost: $.15 cents/per serving
Ingredients:
2c Leftover Holiday Ham 12 Eggs, Scrambled & Seasoned to Taste 1T Butter, Melted 1.5c Almond Milk (but any milk will do) 1c Shredded Cheddar Cheese ¼ c Shredded Parmesan Cheese 4 Slices of Old Bread torn into ½ inch pieces 1 Bagels, separated & torn into ½ inch pieces
Directions:
Preheat oven to 375 degrees
Spray 9x13 casserole dish with Coating Spray. Arrange bread in dish.

Top with ham.

In a small bowl combine Milk, Cheese, Butter, Eggs, and desired Seasoning. Scramble well. Pour over bread and ham. Gently stir in casserole dish allowing mixture to fill gaps and ham to incorporate fully into the dish.

Bake uncovered for 45-50 Mins. It is finished when eggs are slightly browed against the sides and bread is golden brown. Allow to rest for 5 mins before serving. Enjoy!

Healthy Add-ins and Substitutions to be considered:
1c Frozen Broccoli, chopped + additional 1/4c Milk and 1 egg ½ c Pepper Blend Frozen, simply add to mixture 1c Sautéed Kale & 2T Diced Onion. Sub Mozzarella or Grated Parmesan Cheese for Cheddar 1c Frozen Spinach, unthawed & drained + additional 1/4c Milk. Sub Bread for 8pk PIllsbury biscuits
